5 large cucumbers, peeled, seeded and cut into chunks

1/2 cup fresh mint*, chopped

1/4 cup green onions or chives, chopped

1/4 cup lemon juice

2 tsp freshly grated lemon zest

1 tsp sugar

2 cups crushed ice

Salt and pepper, to taste


• Combine the cucumbers, mint, scallions, lemon juice, zest and sugar in a blender; blend

until smooth.

• Add the ice and blend until smooth.

• Season with salt and pepper and serve immediately in chilled bowls.

*You can substitute cilantro or basil for the mint
