Fermented and Cultured Foods

Fermentation is a time-tested method of food preservation that is gaining popularity in the health community as research continues to expose more and more about how bacteria influences the human body. 

In our bodies bacterial cells outnumber human cells 10-to-1. A majority of these bacteria live in our gut, where they have the ability to control how we process food and toxins as well as what hormones and chemicals are released in our nervous systems. This means bacteria have a huge impact on our emotional well-being, cognitive ability, energy levels, and immunity.

A basic understanding of how this system works in our bodies is integral to improving and maintaining health and well-being. This class will teach students some basic principles about how we can use fermented foods to ‘hack’ our own biology and live more healthful lives. We will discuss different methods of fermentation and students will have the opportunity to take home their own samples of foods we make in class.

About Kelsey
Kelsey Conger has been studying natural medicine, nutrition, and healthy living for many years. After her own experiences with autoimmune illness, she turned to herbal medicine and traditional lifestyles to experience greater health and well-being. She is a graduate of the Institute for Integrative Nutrition and Earth Based Institute, where she received certifications for health coaching and nature-connected life coaching. She practices in Lafayette and Boulder as a Wellness Coach specializing in mindfulness practices, functional nutrition, herbal medicine, and yoga. Kelsey has worked at Three Leaf Farm for three years, helping to care for the organically grown vegetables, herbs, and flowers, the wild medicine trail, trees, honeybees, horses, chickens, goats, and the Kid’s Homesteading Camp. Kelsey is a RYT200, RPYT, RCYT certified yoga instructor and leads our yoga on the farm program. She graduated from Naropa University with a Bachelor’s Degree in Contemplative Psychology and Environmental Studies with a Certification in Permaculture. 

Kelsey is passionate about inspiring people to explore healthy living and how these mindfulness based practices can help them lead happier and more productive lives, while also connecting to nature and contributing to making our planet a better place.
